The rolled bacon has the appearance of bright red meat with the alternation of ivory-colored fat. The pancetta is produced by working the belly of pigs born and raised locally. Once the pancetta is obtained proceed with the salting and the aromatization with pepper and other spices. After the salting phase and accurate massaging, the pancetta is washed with white wine and then left to dry for six days, before being moved to a fresh room for maturing for a period of four months.

Ingredients: pork, salt, pepper and chilli.
