The culatello is born from the thighs of pigs born and bred locally, which are boned and trimmed to take only the heart of the thigh. Once the culatello is obtained, the salting and aromatization phase is started with pepper and other spices. After the salting phase and accurate massaging, the culatello is washed with white wine and put into the net to dry for ten days, then moved to a fresh room for maturing for a period of about eight months.
